Cheesy Ham and Potato Soup

​ONLY 5 WEIGHT WATCHER POINTS!

​Before listing the recipe for this amazingly delicious and easy-to-make soup, I must make a disclosure regarding the Weight Watcher points. It is 5 WW points using the old system. I'm not sure what it is with the new system, but I'm sure it is still a low points meal. I'm guessing it will be around 8 points. 

2 cups potatoes, diced/cubed

1 cup water

1 cup chopped carrot

1/2 cup chopped onion

1/2 cup chopped celery

1/4 teaspoon thyme or basil

1/4 teaspoon pepper

1 1/2 cups skim milk

1 can cream of mushroom soup

1 cup cubed ham

4 slices american cheese

Step 1

​In a large saucepan, combine potato, water, carrot, onion, celery, thyme, and pepper. Bring to a boil then reduce heat to a simmer and cover for 10 minutes. 

Step 2

​Stir in milk, cream of mushroom soup, ham, and cheese. 


Step 3

​Reduce heat to low, do NOT boil. Let it heat up to your desired temperature, and then eat.
